Ingredients (grams):

  • 400g beets (about 4 to 5 medium), roasted

  • 10g extra-virgin olive oil (for roasting)

  • 60g salad greens (arugula or spring mix)

  • 20g shallot, thinly sliced

  • 50g green apple, thinly sliced

  • 30g toasted walnuts

  • 56g goat cheese, crumbled or torn

  • 15g balsamic vinaigrette

  • Sea salt and freshly ground black pepper, to taste

  • Microgreens (optional, for garnish)


Instructions:

  1. Preheat oven to 200°C (400°F).

  2. Wrap each beet in foil with a drizzle of olive oil and a pinch of salt and pepper. Roast on a baking sheet for 40–90 minutes, depending on beet size, until fork-tender.

  3. Let cool slightly, then peel the skins under running water and chill in the fridge.

  4. Once cooled, slice beets into ¼-inch rounds.

  5. On a large plate or shallow bowl, arrange salad greens. Top with sliced shallot, apple, roasted beets, walnuts, and goat cheese.

  6. Drizzle with balsamic vinaigrette. Finish with sea salt, black pepper, and optional microgreens. Serve immediately.
